Ingredients:
- All-purpose flour 170g
- Soy Kinako Unsweetened 40g (sift together with flour)
- Unsalted butter 150g (at room temperature)
- Sugar 75g
- Egg yolk 1
- Oatmeal 60g
- Cashews, sesame seeds, flaxseeds 20g each
Instructions:
- In b bowl, mix the softened unsalted butter and sugar with a whisk. No need to incorporate air, just mix until combined.
- Add the egg yolk and stir to combine.
- Add half of the sifted all-purpose flour and Soy Kinako mixture, then gently fold in.
- Add the oatmeal, flaxseeds, cashews, and sesame seeds, and mix. Add the remaining flour mixture and fold in carefully to avoid gluten development.
- Shape the dough into a ball, wrap it in plastic wrap, and refrigerate for 2 hours.
- Once the dough is chilled, slice it into rounds and bake in a preheated 350°F oven for 8-10 minutes
- Transfer the cookies to a cooking rack to cool down.
These cookies have a subtle sweetness, so feel free to dust with powdered sugar once cooled if desired!
