Kinako Protein Oatmeal Cookies

Ingredients:

  • All-purpose flour 170g
  • Soy Kinako Unsweetened 40g (sift together with flour)
  • Unsalted butter 150g (at room temperature)
  • Sugar 75g
  • Egg yolk 1
  • Oatmeal 60g
  • Cashews, sesame seeds, flaxseeds 20g each

 

Instructions:

  1. In b bowl, mix the softened unsalted butter and sugar with a whisk. No need to incorporate air, just mix until combined.
  2. Add the egg yolk and stir to combine.
  3. Add half of the sifted all-purpose flour and Soy Kinako mixture, then gently fold in.
  4. Add the oatmeal, flaxseeds, cashews, and sesame seeds, and mix. Add the remaining flour mixture and fold in carefully to avoid gluten development.
  5. Shape the dough into a ball, wrap it in plastic wrap, and refrigerate for 2 hours.
  6. Once the dough is chilled, slice it into rounds and bake in a preheated 350°F oven for 8-10 minutes
  7. Transfer the cookies to a cooking rack to cool down.

These cookies have a subtle sweetness, so feel free to dust with powdered sugar once cooled if desired!
